These regions include places like Ikaria in Greece and Sardinia in Italy. The residents here add just three key ingredients to enhance the flavour of their vegetables.
The first ingredient is olive oil. It adds richness and is also healthy. The second is garlic, known for its strong taste and health benefits. The last ingredient is fresh herbs, commonly used in these regions to add freshness and aroma.
One expert, Dan Buettner, highlighted how simple cooking techniques make vegetables more appealing. He said, "You can make beans taste better by not just boiling them but by browning them in the oven with onions, a process that caramelises the finish." This method brings out the natural sweetness in the vegetables.
Buettner noted that in blue zones, people eat a wide variety of seasonal garden vegetables. He also mentioned that the long-lived populations eat at least four times more beans than the average person. One study, funded by the World Health Organisation, found that consuming just 20 grams of beans daily lowers the risk of dying in any year by about eight per cent.
